About beef steak (biefstuk)
Biefstuk is a Dutch classic: quick in the pan and good on the BBQ. When a Dutch butcher or webshop sells plain "biefstuk", it usually means kogelbiefstuk, a round steak. It comes from the kogel, part of the top of the hind leg. Kogelbiefstuk is lean and firm, with little fat.
When it says "haasbiefstuk", the steak comes from the tenderloin (ossenhaas). That meat is more tender and usually costs more per kilo than kogelbiefstuk. So check which biefstuk you are comparing. Breed and origin count too: Irish and Scottish beef, Black Angus and Wagyu cost more than standard beef. Biefstukpuntjes and biefstukreepjes are small pieces and strips for the wok or the pan, handy when you cut the meat small anyway.
You buy biefstuk as single steaks or as a whole piece of kogelbiefstuk. A whole piece you slice yourself, so you choose the thickness. For the BBQ a steak of 2 to 3 cm works well: thin enough to cook fast, thick enough to stay pink inside. Good biefstuk is bright red and feels firm. Because kogelbiefstuk is so lean, it dries out fast if you cook it too long. Take it off the heat in time and let it rest for a bit.

How do you cook biefstuk on the BBQ?▾
Take the steak out of the fridge half an hour ahead. Grill it over direct, high heat for 2 to 3 minutes per side for a steak of 2 to 3 cm. Kogelbiefstuk is lean, so take it off the grill at a core temperature of 54 to 56 °C for medium rare. Let it rest for 5 minutes and slice across the grain.
What is Wagyu biefstuk?▾
Wagyu is a Japanese cattle breed known for heavy marbling: lots of fine fat running through the meat. That makes Wagyu biefstuk more tender and richer than regular kogelbiefstuk, so you eat less of it. Crossbreeds are sold as Wagyu too.
