About pork neck (procureur)
Procureur is the Dutch name for pork neck, also called pork collar: the piece between the head and the back of the pig. The meat is marbled with fat, so it stays juicy even when you cook it for hours. That is why procureur is a go-to cut for pulled pork. Sliced on the grill it works well too.
You can buy procureur in several forms: as a whole boneless neck, as a half, as procureurlapjes (slices, plain or seasoned), as steaks or as a rolled roast (rollade). With seasoned slices you pay for the marinade per kilo too. If you want to season it yourself, buy plain.
The price per kilo depends mostly on the pig. Breeds and labels like Duroc, Livar, Iberico, Mangalitza and Duke of Berkshire cost more than standard Dutch pork. Most of those breeds are known for more fat running through the meat, and you can taste it. So always compare the same form and the same breed: a whole neck with a whole neck, slices with slices.
Making pulled pork? Buy a whole or half neck. The meat loses a fair bit of weight during the long cook, so buy generously. For a quick BBQ night, slices or steaks are easier: they are done in a few minutes.

How do you season procureur?▾
For a whole pork neck a dry rub works well: salt, pepper, paprika, brown sugar, garlic powder and onion powder. Rub it in a few hours ahead, or the night before, so the salt can work its way in. For slices and steaks, salt and pepper are enough, maybe with some thyme or rosemary. Seasoned slices from a webshop can go straight on the grill.
How do you cook procureur on the BBQ?▾
There are two ways. A whole neck goes low & slow: indirect at 110 to 120 °C, to a core temperature of 92 to 95 °C. At that point the meat falls apart and you can pull it. Plan on a long day. Slices and steaks go over direct heat for a few minutes per side until cooked through. The fat in the neck keeps them juicy.
What is the difference between procureur and Boston butt?▾
Procureur is the neck of the pig. Boston butt is the American name for the upper part of the shoulder, which includes the neck. So a Boston butt is a bigger piece and is often sold bone-in. Both work for pulled pork.
