About pulled pork
Pulled pork is pork from the shoulder or neck (Boston butt) cooked low & slow for 10 to 14 hours until it falls apart under two forks. One of the simplest BBQ recipes in terms of technique, but a long cook. The fat marbling in the shoulder melts during cooking and gives the meat its characteristic juiciness.
The price per kilo for raw pulled pork (shoulder or neck) differs a lot by grade. Premium variants like Iberico, Duroc, Livar, or organic cost clearly more than standard pork. Some shops sell pre-cooked pulled pork in vacuum bags; that costs more per kilo, but saves you 12 hours of work. Check the current prices above for today's per-kilo numbers by variant.
When buying, check the weight (3 to 5 kilo per piece is common for 8 to 12 people), the presence of a fat cap (a plus), and whether the bone is still in. Bone-in pulled pork has more flavour and is harder to overcook; boneless is easier to plan because cooking time is more predictable. Plan on about 30 to 40% loss from evaporation and bone, so 1 kilo raw equals 600 to 700 grams of pulled product.

How long does pulled pork take on the smoker?▾
Plan on 1 to 1.5 hours per pound (450 g) at 110–120 °C. A 4 kilo shoulder typically takes 10 to 14 hours. Internal temperature and feel matter more than time: around 92–95 °C and when a probe slides through smoothly, the cook is done. Rest for at least one hour wrapped in foil or in a cooler before pulling.
How much pulled pork per person?▾
Plan on 200 to 300 grams of raw meat per person. After cook loss (30–40%) you end up with 120 to 200 grams of pulled product per person, plenty for 2 sandwiches. For a party of 12, a shoulder of about 3 kilo is enough.
