About brisket
Brisket is the breast cut of beef, a large 4 to 8 kg piece made up of two muscles: the lean "flat" and the fattier "point". The signature cut for low & slow on the smoker or barbecue, with Texas-style brisket as the iconic result: 12 to 16 hours of cooking until the collagen melts and the meat slices like butter.
Price per kilo varies widely by breed and size. Premium variants like Black Angus, Irish grass-fed, or dry-aged cost noticeably more than a standard whole packer (4-6 kg). Wagyu brisket is the priciest option. Check the current prices above for today's per-kilo numbers by variant.
When buying, check the thickness of the fat cap (at least 1 cm), the marbling through the flat, and whether both point and flat are present. Many butchers sell only flat or point separately, which can be cheaper but less suited to classic low & slow. A whole packer is the standard for BBQ enthusiasts: order early, good brisket sells out fast around major BBQ weekends.

How long does brisket take on the smoker?▾
Plan on 1 to 1.5 hours per pound (450 g) at 110–120 °C. A 6 kilo whole packer typically takes 12 to 16 hours. Internal temperature and feel matter more than time: around 93–95 °C and when a probe slides in and out smoothly, the brisket is done. Rest for at least one hour wrapped in foil or in a cooler.
What is the difference between flat and point?▾
The flat is the lean, flat part of the brisket, perfect for slicing into neat strips. The point is the fattier, thicker piece, ideal for burnt ends. A whole packer brisket contains both; some butchers sell them separately.
