Brisket buying guide

Whole packer vs. flat vs. point. A whole packer brisket combines both muscles and is the standard for classic low & slow. The flat alone is leaner and easier to slice, the point is fattier and great for burnt ends.

Fat cap thickness. Aim for at least 1 cm of fat cap. Too little and the brisket dries out during a long cook; too much and you trim more weight than you keep.

Weight. Plan on 4 to 6 kilo for a whole packer feeding 8 to 12 people. Smaller pieces (under 3 kilo) tend to be flat-only and finish faster but with less of the BBQ payoff.

Breed and origin. Standard Dutch or European beef works fine. Black Angus and dry-aged add price; Wagyu adds a lot. Most BBQ pitmasters get great results with mid-tier breeds.

Order ahead. Brisket sells out around long weekends and BBQ holidays. Many shops accept pre-orders 1 to 2 weeks out.

What does brisket cost per kilo?

At the 11 online butchers we track, brisket costs on average €32.08 per kilo (all grades) in September 2026. Check the table above for the current per-kilo price by shop.

How long does brisket take on the smoker?

Plan on 1 to 1.5 hours per pound (450 g) at 110–120 °C. A 6 kilo whole packer typically takes 12 to 16 hours. Internal temperature and feel matter more than time: around 93–95 °C and when a probe slides in and out smoothly, the brisket is done. Rest for at least one hour wrapped in foil or in a cooler.

What is the difference between flat and point?

The flat is the lean, flat part of the brisket, perfect for slicing into neat strips. The point is the fattier, thicker piece, ideal for burnt ends. A whole packer brisket contains both; some butchers sell them separately.
