Spare ribs or baby back ribs. Spare ribs come from the belly side: longer, fattier and more flavourful. Baby back ribs come from the loin: shorter (10-13 cm), leaner and quicker to cook. For the classic 3-2-1 method pick spare ribs.
Meat layer on the bones. A good rack has at least 0.5 cm of meat on the bones and is evenly thick along its length. Racks where bone shows through a lot are usually leftovers from the deboning process.
Membrane on or off. The silver skin on the underside turns chewy if you leave it on. Some butchers remove it; otherwise pull it off yourself with a paper towel and a knife.
Breed and seasoning. Standard pork works fine; premium breeds like Iberico, Duroc, or Livar deliver more flavour and marbling. Plain racks are cheaper and give you full control over the rub; pre-seasoned or pre-marinated racks are convenient but saltier.
How many to feed. Plan on one full rack per two people as a main, or one rack for three people with solid sides. An average rack weighs 0.8 to 1.3 kilo and has 11 to 13 bones.

How long do spare ribs take on the barbecue?

For baby back ribs, 2-2-1 often works better because they are leaner and thinner.
