Bone in the price. Plan on 25 to 30% of a tomahawk's weight being bone. The per-kilo price looks higher than for trimmed ribeye, but is more reasonable once you calculate actual meat per person.
Thickness. A tomahawk is usually 4 to 5 cm thick. Below 4 cm the cut loses its signature look and cooks through too fast. Thicker cuts (6 cm+) call for indirect cooking and a probe thermometer.
Bone length. The long, frenched rib is the visual showstopper. Ask the butcher or check the photo: a 15-20 cm cleaned rib delivers the most table impact.
Marbling and breed. The same rib eye muscle sits under the bone, so marbling works the same way. For one special meal the step up to Black Angus or dry-aged pays off; for a weeknight barbecue, standard beef is fine.
Weight per piece. Tomahawks usually come in 800 g to 1.5 kilo per piece. Plan on 600 to 800 g per person (bone included), so one 1.2 kilo tomahawk feeds two people with a side.
