About flank steak
Bavette, also known as flank steak, is a long, flat cut from the flank of the cow. The cut has a pronounced grain and a deep beefy flavour. Long underrated, but in recent years popular as an alternative to pricier steaks.
Flank steak prices are usually friendly, because it was originally a "butcher's cut": one butchers used to keep for themselves. Premium variants (Black Angus, aged) land well above standard flank. Check the current prices above for today's per-kilo numbers.
Key rule with flank steak: always slice across the grain after cooking, or the meat turns tough. The cut works best on high heat, cooked quickly to medium rare and then rested. Many webshops sell flank in pieces of 400–800 grams. Note the difference between bavette d'aloyau (from the loin) and bavette de flanchet (from the flank): the first is more tender.

Flank steak works best on high heat, cooked quickly to medium rare. Rest the cut for 5 minutes after cooking and always slice across the grain. Works in a pan, on the grill, or on the barbecue.
What is the difference between bavette and flank steak?▾
Bavette and flank steak are essentially the same cut: the flat muscle from the belly flank of the cow. "Bavette" is the Dutch and French name, "flank steak" the English one. Inside French butchery, bavette d'aloyau comes from the loin and is more tender, while bavette de flanchet comes from the actual flank and has a coarser grain. Some shops reserve "flank" specifically for the American cut style.
