About picanha
Picanha comes from the rump cap of the cow: a triangular cut with a thick fat cap on one side. Iconic in Brazilian churrasco and in recent years hugely popular on Dutch barbecues. The fat cap delivers extra flavour and tender meat during cooking.
Price per kilo for picanha varies a lot. Premium variants like Black Angus, Uruguayan grass-fed, or dry-aged cost clearly more than standard picanha. Wagyu picanha is the priciest option. Check the current prices above for today's per-kilo numbers by grade.
When picking picanha, look at the thickness of the fat cap (1–2 cm is ideal), the marbling, and the shape. A good picanha is clearly triangular with an even fat layer. Do not slice too early; the fat cap crisps up beautifully on the barbecue. Webshops sell picanha as a whole piece (1–2 kg) or as steaks (200–300 g each).

How do you cook picanha?▾
Classic preparation is to skewer picanha churrasco-style on the barbecue with the fat cap facing out. You can also cook the whole piece indirectly to a core temperature of 54–56 °C, then sear it sharply. Slice across the grain into thin strips.
What is the difference between picanha and rump steak?▾
Picanha and rump steak both come from the rump section of the cow, but they are not the same cut. Picanha is specifically the triangular top piece with its characteristic fat cap. Rump steak is a broader term for the rump cut without the fat cap, often sliced into individual steaks. Picanha tastes richer because of the fat cap; rump steak is leaner and firmer in texture.
