About spare ribs
Spare ribs come from the belly side of the pig and are the classic low & slow choice on the barbecue. An average rack weighs 0.8 to 1.3 kilo and contains 11 to 13 bones. BBQ enthusiasts distinguish between "spare ribs" (the standard belly rib, fattier) and "baby back ribs" (from the loin, leaner and shorter).
Prices per kilo vary widely. Premium variants like Iberico, Duroc, or Livar cost clearly more than standard spare ribs. Pre-marinated or pre-seasoned ribs are usually a bit more expensive than bare racks; check if the marinade matches your taste, or buy plain and season yourself. When buying, check the thickness of the meat over the bones (at least 0.5 cm), the evenness of the rack, and whether the membrane on the underside has been removed. Removing the membrane saves you 10 minutes of prep and gives a much better bite. The classic preparation is the 3-2-1 method: 3 hours smoking indirectly, 2 hours wrapped in foil with juice, 1 hour back on the grill with sauce. Plan on one full rack per two people.

How long do spare ribs take on the barbecue?▾
The classic 3-2-1 method takes 6 hours at 110–120 °C: 3 hours smoking indirectly for flavour and colour, 2 hours wrapped in foil with a splash of apple juice for tenderness, and 1 hour back on the grill with sauce for the glaze. For baby back ribs, 2-2-1 often works better because they are leaner and thinner.
